Corned Beef Bagels

Who said bagels just have to have cream cheese? This delicious recipe is a super simple and unique way to jazz up your bagel!

What you’ll need:

  • 2 plain Rudy’s bagels, split down the middle
  • 2 tbsp of butter, melted
  • ½ cup of Pastorelli pizza sauce
  • 2 oz Stone Ridge corned beef, thinly sliced
  • ½ cup shredded Fontina cheese

Place bagels, cut side down on a work surface and brush the crusts with butter. Turn bagels over and spread evenly with pizza sauce. On the bottom halves, evenly layer with corned beef and Fontina. Cover with top halves and press gently to pack. Place sandwiches in the grill, close the top plate and cook until golden brown and gooey, about 5 minutes.

French Nutella Toast

Is this for breakfast or dessert? We have no idea, and frankly we don’t care. It’s just so good!

You’re going to need:

  • 4 Eggs
  • Splash of Milk
  • Dash of Cinnamon
  • Fresh bread
  • Nutella (the shining star)
  • Powdered sugar

Lightly beat the eggs, milk and cinnamon while you heat up a skillet with 2 tablespoons of butter. Simple enough, right? Now put a layer of Nutella between 2 pieces of bread and gently dunk the bread sandwich in the egg mixture. Now cook the sandwich on medium heat until lightly browned on both sides. Okay go ahead. Sprinkle some powdered sugar on top and enjoy.

Stuffed Breakfast Peppers

What you’ll need:

  • 2 strips of Boar’s Head Bacon
  • 2 Mulay’s Spicy Italian Sausages, casings removed
  • 6 extra-large Eggs
  • 4 medium sized bell peppers (any color)
  • 1 can of Ciro Pizzassimo Pizza Sauce
  • 1 cup of grated Colby Jack Cheese

First, preheat your oven to 375°. Then, pan fry the bacon until nice and crisp, then set aside to cool. Pan fry the sausage and break into small pieces with a spatula. Add the eggs to the cooked sausage, in the pan and scramble until cooked. Cut off the tops of each bell pepper and remove the insides, including the seeds, so that you have a cavity in which to fill. Rinse the bell peppers under cold water to remove any remaining seeds. Spoon the scrambled egg mixture evenly into each bell pepper. Put ¼ cup of cheese on top of the egg mixture, inside each bell pepper. Crumble the bacon and sprinkle on top of the cheese. Wrap each bell pepper individually in aluminum foil and bake at 375° for 25 minutes. Carefully unwrap and cool for about 10 minutes. Enjoy!
